The National debuted in December of 2018 and has been crushing it on the restaurant scene in Telluride ever since. It gets high marks for atmosphere, service, decor and of course, the food. Lovingly prepared by two long-time local chefs, Ross Martin and Erich Owen, the National uses the freshest seasonal ingredients in their creations. 


The menu is divided into sections for appetizers, salads, entrees and desserts, however, all can be considered small plates and shared amongst the table. The menu does change seasonally but there are certainly stalwarts that consistently delight. Try the hamachi and ahi tuna tartare, which comes layered with avocado salad. The tempura rock shrimp is crunchy but takes on a whole different sensation when paired with shishito peppers and drizzled with sriracha aioli. 


Entrees include meat, seafood, and vegetarian options. Some standouts are the diver scallops served on a bed of beluga lentils and the lamb shank accompanied by spinach gnocchetti, tomato, kalamata olive and arugula. If you are heading to the National with your honey, consider sharing the whole roasted branzino or the porterhouse, both designed to be shared by two.


The barkeep, affectionally known as "Diamond Dave", has singlehandedly reinvigorated the craft cocktail scene in Telluride. Always experimenting with different flavors and ingredients, he has created several signature drinks. Some of his latest concoctions include the "Campfire Old Fashioned" and the "The National Negroni". With gin and bourbon back in fashion, these drinks especially please the palate.
